Baking With Eggs

We have put all the chickens in the coop. Well almost all one rooster and three hens are out. Then there is the one hen with her five chicks that are out for now.

Everyday we have been getting anywhere from 5-7 eggs. What am I going to do with that many eggs? I started looking at my bread recipes. I made a Savory Egg Bread this morning. I need to buy some Bananas to make some Banana Bread and Muffins. We don't normally eat eggs for breakfast during the week and we save those for the weekend and I make breakfast tacos.
At this rate I am going to have to hit up Hobby Lobby tomorrow and find me a cool basket for gathering the eggs in. Seven eggs are too many for my hands to bring in and to think if they keep this up we may end up with a dozen eggs a day. I'll have to start selling them if I can't keep up with the demand of the eggs. I can sell a dozen of them for $3 on Craigslist. I can give friends and neighbors a deal on the eggs. It's all a matter of what I want to do with the eggs. I'd really like to bake up a bunch of breads, muffins, etc and freeze them for use later on.

I then went on to cut some slices of bread and ate one piece with some Huckleberry Honey...very sweet and delicious. I cut two more slices and made a Rottisere Chicken Salad sandwich. It was so yummy. I need to learn how to use just the dough option and bake the bread in the oven so I can have actual loaves or use my Mommy's Wishlist and buy the bread maker that makes loaves rather than the towers mine makes.

  1. You can make us some bread with those eggs!! Hint Hint. Also, make the bread the old fashioned way let it rise once, punch it down, shape your loaves, wrap in plastic wrap then paper (newspaper) works and freeze. Then all you have to do is thaw, let rise them bake. That should use up some eggs.

  2. All the recipes I have are for the bread machine. I can use it for dough and then bake in the oven, but I don't know for how long with the recipes.
